Ajvar is a smoky, vibrant red pepper and eggplant spread found on nearly every Balkan table β€” served with bread, meat, or as a dip.

Ingredients:

  • 6 large red bell peppers
  • 2 medium eggplants
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tbsp vinegar
  • Salt to taste

Method:

  1. Roast peppers and eggplants until skins blister and char.
  2. Peel off the skins, remove seeds, and mash the flesh.
  3. In a pan, sautΓ© garlic in olive oil, add mashed vegetables.
  4. Cook for 20–30 minutes on low until thickened.
  5. Stir in vinegar and salt; cool before serving.
