

Ajvar
Ajvar is a smoky, vibrant red pepper and eggplant spread found on nearly every Balkan table β served with bread, meat, or as a dip.
Ingredients:
- 6 large red bell peppers
- 2 medium eggplants
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tbsp vinegar
- Salt to taste
Method:
- Roast peppers and eggplants until skins blister and char.
- Peel off the skins, remove seeds, and mash the flesh.
- In a pan, sautΓ© garlic in olive oil, add mashed vegetables.
- Cook for 20β30 minutes on low until thickened.
- Stir in vinegar and salt; cool before serving.
